French Tarragon Carrot Salad
Serves 6 to 8
This colorful salad has always been a hit with kids as well as adults in our household. I love to use a tarragon vinegar for the dressing to enhance the flavor but sherry vinegar works just as well. Make this salad an hour before serving to let the flavors marinate together.
Ingredients
5 carrots, shredded
1 red cabbage, shredded
1 small onion, finely chopped
1 bunch fresh dill, chopped
1 bunch fresh tarragon, chopped
2 large lemons, zest one and juice both
½ cup dried black currants
Dressing Ingredients
5 tablespoons extra virgin olive oil
2 tablespoons whole milk yogurt
1 tablespoon tarragon vinegar or sherry vinegar
1 teaspoon Dijon mustard
½ teaspoon kosher salt
¼ teaspoon ground pepper
Directions
Toss carrots, cabbage, red onion, dill, tarragon, and zest in a large bowl. Sprinkle with 1 tablespoon lemon juice and toss to coat (to preserve the color). Soak currants with the remaining 3 tablespoons lemon juice in a small bowl while you make the vinaigrette.
Make the vinaigrette: combine oil, yogurt, mustard, vinegar, salt and pepper, in a small jar and shake, to emulsify.
Add the dressing and currants in lemon juice into the large bowl with the carrots. Toss and refrigerate for up to an hour, then serve.
